After washing and chopping the cauliflower, prepare the frying pot with the oil or preheat the oven. In case you make them in oil, you must first cover with the mixture that you left in the fridge and then fry, and when you remove them, you bathe them with the sauce. If baked, first bake, then bathe in the mixture, dip in the sauces and bake again.
